Fruit and Chocolate Overnight Oats

My brother in law shared how eating overnight oats five days a week lowered his blood cholesterol to impressively low levels. He and his wife highly recommended steel cut oats.

As I have high cholesterol, I decided to give it a shot. Initially, I'd mix cocoa powder and honey into the fudge, then pour skim milk and steel cut oats onto it. Left overnight, it made a delicious breakfast the next morning. (I'm a die hard chocoholic and chocolate for breakfast works for me.

I also have osteoarthritis. Avocado is apparently a super food that helps reduce inflammation. With my food as medicine motto, I decided to use that instead of chocolate.

The latest and best iteration of my overnight oats is this - mango, avocado, dark chocolate coverture (from my scones baking supplies) overnight oats.

Ingredients

  • quarter cup steel cut oats
  • frozen avocado cubes
  • frozen mango cubes
  • dark chocolate (baking chips or coverture
  • skim milk
  • 1 tablespoon honey (or less according to how sweet your tooth is)


Method

  1. Put honey in container
  2. Fill two thirds of the container with skim milk (or measure how much you feel comfortable with). Stir to dissolve the honey.
  3. Add mango cubes, avocado cubes and dark chocolate. (I pour straight from the packet because I'm lazy)
  4. Add steel cut oats
  5. Cover and keep in the fridge overnight.
  6. Enjoy for breakfast or supper or snack. If it's still there.
